This is an awesome “salad” that makes a great addition to holiday meals, we serve it at Easter, Thanksgiving and Christmas in my family and it goes with supper as a side dish not as a dessert for us.

Ingredients You’ll Need:
- 1 9 oz container of cool whip
- 2 small boxes or 1 large of orange jello
- 1 container of cottage cheese
- 1 can crushed pineapple
- 1 can Mandarin Oranges
Let’s Whip it Up!
- Thaw Cool whip and pour into medium sized bowl.
- Drain and rinse cottage cheese. I put it in a colander in the sink and run water through it until it is just the curds.
- Mix the cottage cheese into the cool whip.
- Mix in the dry orange Jello powder.
- Drain the crushed pineapple. I put this in the colander in the sink as well and just shake it, mix into the salad.
- Drain the Mandarin oranges and cut into pieces 3 or 4 per orange piece. Save about 5 slices to garnish the top of the salad.
- Mix the sliced up orange piece into the salad. Garnish with remaining orange slices and refrigerate at least 4 hours but overnight is recommended.
Note: In mixing this salad be careful not to over mix or you will make it runny.
