Ingredients You’ll Need:
Mojo Sauce

4 garlic cloves - 2 serrano chilies, deseeded
- 1/2 handful fresh cilantro leaves
- Juice of 2 limes
- Juice of 1 orange
- 1/2 cup extra-virgin olive oil
- Sea salt and freshly ground black pepper
Additional Ingredients
- 8 large flour tortillas
- 1 (3 to 4 pound) whole grilled chicken, shredded (Or get the easy roasted ones at the store!)
- Spicy Black Beans (buy the canned variety)
- 2 avocados chopped
- 1 cup grated queso blanco or Monterey jack cheese
- Sour cream, for garnish
Let’s Get Cooking:
- add the orange, lime juices, olive oil, ¼ tablespoon of salt, few dashes of pepper, cilantro, chilies and garlic in blender or food processor and blend until smooth, almost creamy. Feel free to add more cilantro if you wish.
- To get the Burritos ready, warm the tortillas for 30 seconds in a dry skillet or in the oven until pliable. Place the chicken on the bottom the tortilla, then add beans, avocado, cheese, and mojo sauce. Add sour cream if you like. I love sour cream but these don’t need it. Especially if we cook them over coals.
- To make the beans a little more special, add a couple pinches of tumeric, and a couple smashed cloves of garlic, and a sprinkling of Olive Oil.
- We also sometimes add fresh tomatoes and romaine lettuce to this. And I love corn on my tacos, so I have been known to add corn to anything spanish… I know it pretty strange to anyone that hasn’t tried it but we do eat corn tortillas!
- Once you get this routine down, it take no time at all, and you can knock it out in no time flat! Enjoy!

What makes this recipe so good to me is it’s not just a cook some meat, add some tom. and onion and roll it up. The juice of an orange makes my mouth water because I know it will have exciting flavors.

Sorry, but you lost me at the black beans. I like a lot of different types of beans but those are not one of them. Other than that is sound great.
